Tex-Mex Cottage Corn Muffins
- 3/4 cup Darigold cottage cheese
- 1 egg
- 1 package (8.5 oz.) corn bread mix
- 1 can ( oz.) corn kernels, drained
- 1/4 cup chopped green onions
- 2 tablespoons chopped green peppers
Combine cottage cheese and egg in medium mixing bowl; stir in corn bread mix until blended. Stir in corn, chiles and onion just until mixed. Pour into greased muffin tin. Bake in 400°F. oven 20 to 23 minutes or until tests done when pick inserted into center comes out clean.
