Lowfat Pasta Primavera

INGREDIENTS

  • 1 1/2 Cups Darigold Cottage Cheese regular, low fat or fat free
  • 3/4 Cup Darigold Milk
  • 1 1/2 t Crushed Garlic
  • 1/4 t Salt
  • Fresh Ground Pepper to taste
  • 2 Cups Uncooked Fusilli or Rottini Pasta
  • 1 Lb Frozen Vegetable Blend or 1 Lb Fresh Steamed Vegetables
  • Garnish
  • 1/4 Cup Grated Parmesan Cheese
  • Red Pepper Flakes optiona
  • Suggested Add Ins
  • Chopped Cooked Chicken Breast
  • Chopped Cooked Salmon
  • Cooked Shrimp
  • Prosciutto Ham

INSTRUCTIONS

Combine Darigold Cottage Cheese, Darigold Milk, crushed garlic, salt and pepper in a blender until smooth. Thaw frozen vegetables and cook pasta according to package instructions. While pasta is cooking, very gently warm primavera sauce over low heat until sauce is just warm. Drain hot cooked pasta and vegetables, top with primavera sauce and cheese, toss lightly and serve immediately.
