Caprese-style-Cottage-Topper

INGREDIENTS

  • 2 cups Darigold cottage cheese
  • 1 cup coarsely chopped fresh tomatoes
  • ¼ cup chopped fresh basil
  • ¼ cup toasted pine nuts
  • 5-6 cloves garlic, peeled and minced
  • ½ teaspoon salt (optional)
  • ½ teaspoon coarsely ground black pepper

INSTRUCTIONS

Combine all ingredients in medium bowl; mix to blend well. Spread over a toasted bagel or English muffin.

RECIPE YIELD/SERVING SIZE

Makes 4 to 6 servings.
