Blackberry Pudding

INGREDIENTS

Pudding

  • 1/2 cup Darigold Butter
  • 1 1/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 16 oz. bags frozen blackberries

Icing

  • 1 cup powdered sugar
  • 2 tablespoons Darigold Half & Half Cream or Milk
  • 1 tablespoon Darigold Butter
  • 1/2 teaspoon vanilla

INSTRUCTIONS

Pudding
Cream butter and sugar. Add egg and vanilla. Add flour, baking powder and salt to cream mixture. Fold frozen berries into mixture. Pour into a greased 2-quart baking dish and bake at 350° for one hour to 1 3/4 hours. Cool before icing.

Icing
Melt butter in microwave or saucepan. Blend powdered sugar, cream, and vanilla into the melted butter.

Preparation: 5 minutes Cooking: 1 1/2 to 1 3/4 hours
