Blackberry Pudding
INGREDIENTS
Pudding
- 1/2 cup Darigold Butter
- 1 1/4 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 16 oz. bags frozen blackberries
Icing
- 1 cup powdered sugar
- 2 tablespoons Darigold Half & Half Cream or Milk
- 1 tablespoon Darigold Butter
- 1/2 teaspoon vanilla
INSTRUCTIONS
Pudding
Cream butter and sugar. Add egg and vanilla. Add flour, baking powder and salt to cream mixture. Fold frozen berries into mixture. Pour into a greased 2-quart baking dish and bake at 350° for one hour to 1 3/4 hours. Cool before icing.
Icing
Melt butter in microwave or saucepan. Blend powdered sugar, cream, and vanilla into the melted butter.
TIME
Preparation: 5 minutes
Cooking: 1 1/2 to 1 3/4 hours
