Cottage Potato Pancakes

INGREDIENTS

  • 1 package (20 oz.) fresh shredded hash brown potatoes (like Simply Potatoes)
  • 1 cup Darigold cottage cheese
  • 2 eggs
  • 1/4 cup chopped onion
  • 1/4 cup Darigold butter, divided
  • 1/4 cup olive oil, divided

INSTRUCTIONS

Combine all ingredients; mix well to blend. Melt 2 tablespoons butter along with 2 tablespoons olive oil in hot skillet; mound about 1/2 cup potato mixture onto skillet; repeat to fill skillet. Cook 5 to 7 minutes or until bottom is golden; flip pancake and cook additional 5 minutes or until light brown. Repeat until no more batter remains.

Makes 4 servings.
