Cucumber Raita
INGREDIENTS
- 1 English cucumber
- 1 teaspoon salt, divided
- 3 cups Darigold plain yogurt
- 1/4 to 1/2 tsp. ground cumin
- 1/4 to 1/2 cup chopped fresh cilantro
INSTRUCTIONS
Grate cucumber; squeeze out excess water and place cucumber into colander. Sprinkle 1/2 teaspoon salt over cucumber and let drain in colander. Pour yogurt into medium mixing bowl and beat. Add remaining salt and cumin and stir to mix. Add well-drained cucumber and cilantro to yogurt mixture. Cover and place in refrigerator until chilled.
RECIPE YIELD/SERVING SIZE
Makes about 4 cups.
